Namnam coco palm sugar is the modern incarnation of the traditional Philippine Pakaskas palm sap sweetener. Our ancestors made these sweeteners from the fresh, sweet palm sap prior to the introduction and widespread cultivation of the sugar cane by the Spaniards. The traditional pakaskas are made from the Buri palm tree.

Coco Palm sugars are natural sweeteners made from the fresh sap of the coconut tree (cocos nucifera). Water is removed from the fresh sap by evaporation. No additive of any kind is introduced in the process.  It takes approximately four liters of fresh coconut sap to produce one kilogram of coco palm sugar, and about three hours of rapid evaporation by boiling.

Modern scientists from the Food and Nutrition Research Institute of the Philippine Department of Science and Technology has determined the many health benefits of sweeteners made from the coconut sap:
